How it tastes

In the glass

Fresh and gripping Chardonnay with orchard fruit, mineral tension, and oxidative complexity.

Profile

Body LightFull
Acidity SoftBright
Grip SilkyGrippy
Wild side CleanFunky

Nose

Orchard fruit, citrus peel, soft spice, floral undercurrents.

Palate

Fresh fruit core underpinned by a subtle vein of mineral tension. The texture is lithe yet gripping, with bright, balanced acidity and a hint of saline or chalk-like nuance that gives depth without heaviness.

Finish

Quietly persistent, reflecting the wine's distinct vinification and complexity.

“An unconventional Limoux Chardonnay shaped by Jura-inspired oxidative practices.”

How to serve

Getting the best out of it

Temperature

Cool, not cold. Straight from the fridge the fruit holds back; ten minutes on the table and it speaks.

Air

Little. It was aged in contact with air, so it is already open: just don't serve it too cold, or the nutty, savoury side stays hidden.

When to drink

Ready now and very stable: the oxidative ageing means air and time have already shaped it. It will keep for years.

Once open

Aged with oxygen on purpose, so air can't hurt it: it stays the same for days and sometimes improves. Cork in, cool place. 5–7 days.

How to pair it

This is a textured white

Richer whites can take richer food: butter, cream and roast chicken are fair game. Keep the acidity in mind and don’t drown it in sauce.

Match

Flavours that echo the wine.

  • White meat (roast chicken, rabbit)
  • Mushrooms
  • Creamy rice and pasta (risotto)
  • Hard cheeses

Contrast

Opposites that make each other better.

  • Smoked fish (trout, mackerel)
  • Fatty pork (pork belly)
  • Salty aged cheese (pecorino)

Careful with

Combinations that flatten the wine.

  • Very spicy dishes
  • Red meat in red sauce
  • Sweet desserts

Soils
Clay-limestone, contributing mineral character and structure.
Farming
HVE certified, moving toward full organic.

Additions
Minimal sulphur.

Where it's from · Languedoc-Roussillon, France

Roquetaillade

The terroir of Roquetaillade is special within the broader Limoux landscape because of its high altitude and climatic crossroads. Here, Mediterranean warmth, Atlantic humidity, and Pyrenean coolness meet, creating significant day-night temperature swings that help preserve acidity and freshness in the grapes.

Good to know

Questions we get a lot

Is this a natural wine?

All our wines come from small growers who farm organically or biodynamically and keep intervention in the cellar to a minimum: native yeasts, little or no added sulphites. Every producer has their own approach; the details are in “From the vineyard to the bottle” above.

Why is it a bit cloudy, or is there sediment?

Many of our wines are bottled unfiltered. A light haze or some sediment is natural and harmless: stand the bottle upright for a few hours and pour gently.

How long does it keep once open?

It depends on the wine (see “Once open” above). As a rule: cork back in and keep it in the fridge, reds included.

When will my order arrive?

We ship Tuesday to Saturday, usually right away. In Germany delivery takes 2–3 working days; rates for every country are on our shipping page.

Can I pick up in Berlin?
