Fresh and gripping Chardonnay with orchard fruit, mineral tension, and oxidative complexity.

Nose: Orchard fruit, citrus peel, soft spice, floral undercurrents.
Palate: Fresh fruit core underpinned by a subtle vein of mineral tension. The texture is lithe yet gripping, with bright, balanced acidity and a hint of saline or chalk-like nuance that gives depth without heaviness.
Finish: Quietly persistent, reflecting the wine's distinct vinification and complexity.
Serve: Cool, not cold. Straight from the fridge the fruit holds back; ten minutes on the table and it speaks.

An unconventional Limoux Chardonnay shaped by Jura-inspired oxidative practices.

Chardonnay from the Limoux appellation in the Languedoc, grown on clay-limestone at 450 m in Roquetaillade.

Vines: 100% Chardonnay from estate fruit.
Soils: Clay-limestone, contributing mineral character and structure.
Farming: HVE certified, moving toward full organic.
Cellar: Fermented in demi-muids and tanks, aged on the lees with lighter topping up for a touch of oxidation: a nod to Jura Chardonnay, and to Frédéric, the Jura-born brother-in-law who works at the estate.
Additions: Minimal sulphur.
