How it tastes

In the glass

Lively and refined Crémant with citrus brightness, chalky minerality, and persistent mousse.

Profile

Body LightFull
Acidity SoftBright
Grip SilkyGrippy
Wild side CleanFunky

Nose

Citrus, hints of orchard fruit, white blossom, subtle saline nuance.

Palate

Citrus brightness and orchard fruit weave through chalky mineral tones. Energetic, crisp acidity gives a clean structural frame that supports a delicate, persistent mousse.

Finish

Refreshing and refined, expressive of both varietal detail and limestone-tinged terroir.

“A Brut Nature expression shaped by altitude, limestone, and at least 18 months on lees.”

How to serve

Getting the best out of it

Temperature

Chilled, not ice-cold. Too cold and the mousse stays tight and the perfume shuts down; a few degrees warmer and the wine opens up.

Air

None. Open it cold and pour straight away: the bubbles are the point.

When to drink

Ready now: the time on the lees in the cellar already did the waiting. It keeps two or three years in a cool, dark place, slowly gaining toasty, nutty notes.

Once open

Bubbles go first, flavour stays. With a sparkling stopper in the fridge, on day two it's quieter, more like a white wine, and still good with food. 1–2 days.

How to pair it

This is a sparkling wine

Acidity and bubbles scrub the palate clean. The saltier, crunchier and fattier the food, the better it works.

Match

Flavours that echo the wine.

  • Raw shellfish (oysters, crudo)
  • Aged hard cheese (Parmigiano, Comté)
  • Egg dishes
  • Salty snacks (crisps, olives)

Contrast

Opposites that make each other better.

  • Fried food (tempura, fritto misto)
  • Creamy dishes (risotto, carbonara)
  • Cured meats (prosciutto)

Careful with

Combinations that flatten the wine.

  • Sweet desserts
  • Tomato-heavy sauces
  • Very spicy food

Terroir & winemaking

From the vineyard to the bottle

60% Chardonnay, 30% Pinot Noir and 10% Chenin Blanc from Limoux, grown on clay-limestone at 400 m in Roquetaillade.

Vines
Estate vines, picked a little riper than usual for sparkling to give a more vinous bubble.
Soils
Clay-limestone at 400 m, contributing mineral character and freshness.
Farming
HVE certified, moving toward full organic.
Cellar
Base wines fermented and aged for eight months on the lees in old demi-muids, followed by traditional secondary fermentation in bottle with added grape must. At least 18 months ageing on lees before disgorgement.
Additions
Brut Nature—no added sugar at disgorgement.

Where it's from · Languedoc-Roussillon, France

Roquetaillade

The terroir of Roquetaillade is special within the broader Limoux landscape because of its high altitude and climatic crossroads. Here, Mediterranean warmth, Atlantic humidity, and Pyrenean coolness meet, creating significant day-night temperature swings that help preserve acidity and freshness in the grapes.

Domaine de Mouscaillo

Artisan vignerons expressing high-altitude Limoux freshness and diverse terroir

Domaine de Mouscaillo was founded in 2004 by Marie-Claire and Pierre Fort, rooted in their family’s connection to Roquetaillade, a high-altitude terroir in Limoux with fresh climate influences from both the Pyrenees and the Mediterranean.

“Our work in the cellar must be minimalist and without artifice to let the vineyard speak.”

Good to know

Questions we get a lot

Is this a natural wine?

All our wines come from small growers who farm organically or biodynamically and keep intervention in the cellar to a minimum: native yeasts, little or no added sulphites. Every producer has their own approach; the details are in “From the vineyard to the bottle” above.

Why is it a bit cloudy, or is there sediment?

Many of our wines are bottled unfiltered. A light haze or some sediment is natural and harmless: stand the bottle upright for a few hours and pour gently.

How long does it keep once open?

It depends on the wine (see “Once open” above). As a rule: cork back in and keep it in the fridge, reds included.

When will my order arrive?

We ship Tuesday to Saturday, usually right away. In Germany delivery takes 2–3 working days; rates for every country are on our shipping page.

Can I pick up in Berlin?

Yes. Choose pickup at checkout and collect your order at our shop in Berlin.
