How it tastes

In the glass

High-altitude Chardonnay that reads closer to Chablis than to the Languedoc.

Profile

Body LightFull
Acidity SoftBright
Grip SilkyGrippy
Wild side CleanFunky

Nose

Citrus peel, green apple, a flinty mineral edge and a slight toasty note from the lees and old wood. Restrained and focused.

Palate

Steely and precise — real concentration without weight. The long lees contact adds texture and depth, but the acidity keeps everything lifted and clean. Not a generous wine; a serious one.

Finish

Long, mineral, dry. A slight saline persistence on the back palate.

“A high-altitude Chardonnay shaped by clay-limestone soils and 12 months in old demi-muids.”

How to serve

Getting the best out of it

Temperature

Cool, not cold. Straight from the fridge the fruit holds back; ten minutes on the table and it speaks.

Air

None needed: fresh and aromatic, pour and drink.

When to drink

Drink it young, within two years of the vintage, while the fruit is bright.

Once open

The fruit slowly fades, the acidity stays. Cork in, fridge. 2–3 days.

How to pair it

This is a fresh white

Match intensity: light food, light wine. Let the acidity do the job a squeeze of lemon would do.

Match

Flavours that echo the wine.

  • Green vegetables and herbs (peas, courgettes, pesto)
  • Grilled or steamed white fish
  • Shellfish
  • Fresh goat cheese

Contrast

Opposites that make each other better.

  • Fried fish and seafood (fritto misto, calamari)
  • Creamy fresh cheese (burrata, stracciatella)

Careful with

Combinations that flatten the wine.

  • Red meat
  • Smoky barbecue
  • Chilli-hot dishes

Terroir & winemaking

From the vineyard to the bottle

A family estate set in the steep hills of Roquetaillade above Limoux, at nearly 300 metres altitude — cool temperatures, strong winds, thin soils.

Vines
Chardonnay, 40-year-old vines on clay-limestone soils in the foothills of the Pyrenees.
Soils
Argilo-calcaire — clay and limestone. The altitude and ocean-Mediterranean crosswinds preserve freshness and natural acidity.
Farming
HVE certified, moving toward full organic.
Cellar
Fermented and aged 12 months on lees in old demi-muids (500–600L French oak). Stirred occasionally. Bottled after a minimum 6 months in bottle.
Additions
Minimal sulphur. No fining, no filtration.

Where it's from · Languedoc-Roussillon, France

Roquetaillade

The terroir of Roquetaillade is special within the broader Limoux landscape because of its high altitude and climatic crossroads. Here, Mediterranean warmth, Atlantic humidity, and Pyrenean coolness meet, creating significant day-night temperature swings that help preserve acidity and freshness in the grapes.

Domaine de Mouscaillo

Artisan vignerons expressing high-altitude Limoux freshness and diverse terroir

Domaine de Mouscaillo was founded in 2004 by Marie-Claire and Pierre Fort, rooted in their family’s connection to Roquetaillade, a high-altitude terroir in Limoux with fresh climate influences from both the Pyrenees and the Mediterranean.

“Our work in the cellar must be minimalist and without artifice to let the vineyard speak.”

Good to know

Questions we get a lot

Is this a natural wine?

All our wines come from small growers who farm organically or biodynamically and keep intervention in the cellar to a minimum: native yeasts, little or no added sulphites. Every producer has their own approach; the details are in “From the vineyard to the bottle” above.

Why is it a bit cloudy, or is there sediment?

Many of our wines are bottled unfiltered. A light haze or some sediment is natural and harmless: stand the bottle upright for a few hours and pour gently.

How long does it keep once open?

It depends on the wine (see “Once open” above). As a rule: cork back in and keep it in the fridge, reds included.

When will my order arrive?

We ship Tuesday to Saturday, usually right away. In Germany delivery takes 2–3 working days; rates for every country are on our shipping page.

Can I pick up in Berlin?
