HOW THEY GOT HERE

Domaine de Mouscaillo was founded in 2004 by Marie-Claire and Pierre Fort, rooted in their family’s connection to Roquetaillade, a high-altitude terroir in Limoux with fresh climate influences from both the Pyrenees and the Mediterranean.

Today, the estate is run by the next generation — Camille, Thomas, and Frédéric Fort — young vignerons who left other careers to return and partner with their parents in crafting wine.

Their vineyards sit on steep foothills at around 400 m above sea level, carved into limestone clay soils that retain moisture and lend freshness and sharpness even in hot summers.

From the beginning, Mouscaillo’s philosophy has been one of minimal intervention and terroir expression. Vineyard decisions are guided by observation and ecological respect, rather than dogma, and the goal has always been to make wines that reflect the character of Roquetaillade’s unique soil, altitude, and microclimate.

Where The Wine Is Born

The terroir of Roquetaillade is special within the broader Limoux landscape because of its high altitude and climatic crossroads. Here, Mediterranean warmth, Atlantic humidity, and Pyrenean coolness meet, creating significant day-night temperature swings that help preserve acidity and freshness in the grapes.

The soils are deep calcareous clays, acting like natural sponges that hold water even through dry spells, and are rich in marine fossils — a reminder of the ancient sea that once covered this land.

These conditions provide a foundation for wines with fresh energy, lively acidity, mineral tension, and strong ageing potential — a profile that Domaine de Mouscaillo celebrates by keeping vineyard and cellar practices aligned with this sense of place.

Domaine de Mouscaillo is a family estate in Roquetaillade, created by Marie-Claire and Pierre Fort in 2004 and now run by Camille, Thomas, and Frédéric. The estate’s roughly 7 hectares of vines sit on the calcareous clay hillsides of Limoux, influenced by a climate that balances Mediterranean warmth, Atlantic humidity, and Pyrenean cooling — resulting in vivid freshness and sharp temperature variation that preserves acidity and nuance in the fruit.

The vineyard is planted primarily to Chardonnay (≈80 %), with Mauzac Blanc, Chenin, and Pinot Noir contributing to a diverse range of wines that includes still whites, rosé, rouge, and sparkling Crémant.

Mouscaillo follows agroecological principles and holds High Environmental Value (HVE) certification, with ongoing efforts toward full organic certification. Vineyard work emphasizes biodiversity, moisture retention, and minimal intervention so that healthy grapes with strong terroir character enter the cellar.

In the winery, Mouscaillo keeps things simple and expressive: fermentation and élevage are designed to let the site speak, with limited manipulation or artifice. Their wines are crafted to highlight freshness, minerality, and structural clarity, reflecting Roquetaillade’s altitude and soil strength — wines that feel alive, precise, and poised for ageing.
