How it tastes
In the glass
Made for the moment — the bottle you open without thinking, at a table outside.
Profile
Nose
Lemon rind, lemon balm, white flowers, a subtle fennel note and a whiff of sea salt. Bright and immediately inviting.
Palate
Light body, vibrant acidity, a mineral generosity from the lees contact. Refreshing and moreish — the low alcohol keeps it light and the Vermentino character gives it personality.
Finish
Clean, saline, with a light citrus persistence. Made to be refilled.
“A one-litre Vermentino picked early for freshness and aged on its lees in tank.”

Terroir & winemaking
From the vineyard to the bottle
Zinzinu is Nicolas and Julie Mariotti Bindi's personal everyday white — named after the sea urchins they eat it with off the Corsican coast.
- Vines
- Vermentino on clay and limestone slopes at 250 metres altitude in Patrimonio, northern Corsica. Certified organic.
- Soils
- Clay and limestone. Harvested deliberately early at low maturity (12% natural alcohol) to preserve freshness and acidity.
- Farming
- Certified organic. Hand harvested.
- Cellar
- Direct press, thermoregulated stainless steel fermentation. Indigenous yeasts. Aged 6–8 months on lees in tank. Bottled in 1 litre.
- Additions
- Minimal sulphur (printed on label).

PATRIMONIO
Patrimonio is one of Corsica’s most naturally “serious” wine zones: it can deliver Mediterranean ripeness, but the best sites also give real tension. Oletta sits close enough to the sea to feel the air and light, yet with a landscape that can hold freshness — the key to making wines that feel dry and precise rather than warm and soft.

Nicolas Mariotti Bindi
Corsica with a limestone spine — Patrimonio whites and reds that stay precise, saline, and quietly intense.
Nicolas Mariotti Bindi didn’t start with an obvious “winemaker path.” He left Corsica to study law in Paris, then made a sharp U-turn back home, choosing vines over the expected career. That first pivot matters, because it explains the tone of the wines: purposeful, precise, and built more on conviction than tradition-for-tradition’s-sake.
“Je ne suis pas issu du milieu.”
- Style
- Mediterranean wines with restraint: bright, salty whites and reds that stay lifted, herbal, and structured without heaviness
- Grapes
- Vermentinu for whites; Niellucciu for reds, with small cuvées depending on parcels and vintage
- Farming
- Organic farming, careful handwork, and parcel focus — low yields and patience over speed
- Winemaking
- Natural fermentations, minimal sulphur with totals often written on the label; no fining or filtration; élevage split between concrete/cement and used barrels
- Signature
- Corsica without caricature — sunlight held in check by freshness, sap, and a dry mineral finish

Good to know
Questions we get a lot
Is this a natural wine?
All our wines come from small growers who farm organically or biodynamically and keep intervention in the cellar to a minimum: native yeasts, little or no added sulphites. Every producer has their own approach; the details are in “From the vineyard to the bottle” above.
Why is it a bit cloudy, or is there sediment?
Many of our wines are bottled unfiltered. A light haze or some sediment is natural and harmless: stand the bottle upright for a few hours and pour gently.
How long does it keep once open?
It depends on the wine (see “Once open” above). As a rule: cork back in and keep it in the fridge, reds included.
When will my order arrive?
We ship Tuesday to Saturday, usually right away. In Germany delivery takes 2–3 working days; rates for every country are on our shipping page.
Can I pick up in Berlin?
