How It Tastes

A rare Côte de Beaune white — rich and structured, but with genuine precision underneath.

Nose: Ripe apple, pear, white flowers, and a subtle toasty note from the oak aging. Generous but not heavy — the marl soils add a mineral counterpoint.
Palate: Medium-full body with a round, composed entry. The 12 months in barrel build real texture. Good acidity keeps it from feeling heavy. An oyster-shell minerality runs underneath the fruit.
Finish: Long and dry, with a fine phenolic grip and a mineral persistence.
Serve: 10–12°C. Worth opening 30 minutes ahead.

TERROIR & WINEMAKING

Only 5% of Savigny-lès-Beaune's vineyard is planted to white varieties. Les Saucours is one of the most favourable white wine sites — a gently sloping north-facing hillside on marl-rich soils at the entrance to the village.

Vines: Chardonnay (90%) and Pinot Blanc (10%), 60-year-old vines on marl and limestone soils. Five generations of family farming since 1914. Certified organic.
Soils: Marl and limestone — the so-called "white soils" of Savigny that give the wine its richness and round structure.
Farming: Certified organic. Hand harvested at dawn to preserve freshness.Cellar: Direct press, 48 hours settling. Fermented on indigenous yeasts in French oak barrels (20% new). Malolactic fermentation in barrel. Aged 12 months on lees, no bâtonnage. Bottled unfined, unfiltered.
Additions: Minimal sulphur. No fining, no filtration.
