High-altitude Chardonnay that reads closer to Chablis than to the Languedoc.

Nose: Citrus peel, green apple, a flinty mineral edge and a slight toasty note from the lees and old wood. Restrained and focused.
Palate: Steely and precise — real concentration without weight. The long lees contact adds texture and depth, but the acidity keeps everything lifted and clean. Not a generous wine; a serious one.
Finish: Long, mineral, dry. A slight saline persistence on the back palate.
Serve: 10–12°C. Opens up significantly with 30 minutes of air.

A family estate set in the steep hills of Roquetaillade above Limoux, at nearly 300 metres altitude — cool temperatures, strong winds, thin soils.

Vines: Chardonnay, 40-year-old vines on clay-limestone soils in the foothills of the Pyrenees.
Soils: Argilo-calcaire — clay and limestone. The altitude and ocean-Mediterranean crosswinds preserve freshness and natural acidity.
Farming: HVE certified, moving toward full organic.
Cellar: Fermented and aged 12 months on lees in old demi-muids (500–600L French oak). Stirred occasionally. Bottled after a minimum 6 months in bottle.
Additions: Minimal sulphur. No fining, no filtration.
