How it tastes
In the glass
Deep golden reserve with rich aromatics, creamy texture, and crystalline minerality.
Profile
Nose
Ripe orchard and citrus fruits, toasted almonds, honey, dried fruit, layers of dried citrus and subtle spice.
Palate
Broad yet incisive with fine, persistent perlage. Vibrant acidity balances creamy texture from prolonged lees contact. Saline-tinged minerality gives definition and lift, while gentle oxidative nuance adds complexity.
Finish
Long and reflective, showcasing both the maturity of 15 years on lees and the calcareous terroir of Gussago.
“A rare, standout reserve aged 180 moons with zero dosage.”
How to serve
Getting the best out of it
How to pair it
This is a sparkling wine
Acidity and bubbles scrub the palate clean. The saltier, crunchier and fattier the food, the better it works.
Match
Flavours that echo the wine.
- Raw shellfish (oysters, crudo)
- Aged hard cheese (Parmigiano, Comté)
- Egg dishes
- Salty snacks (crisps, olives)
Contrast
Opposites that make each other better.
- Fried food (tempura, fritto misto)
- Creamy dishes (risotto, carbonara)
- Cured meats (prosciutto)
Careful with
Combinations that flatten the wine.
- Sweet desserts
- Tomato-heavy sauces
- Very spicy food

GUSSAGO
Gussago sits where Franciacorta's flat, glacial-moraine landscape begins to climb toward the Prealps. Nicola's vineyards occupy hillside parcels at moderate altitude, on pure limestone soils that set them apart from much of the appellation. Where Franciacorta's typical terroir delivers roundness and approachability, these calcareous slopes produce something sharper — wines with tension, mineral drive, and a structural backbone that only reveals itself slowly.
The winemaker · Gussago, Lombardy, Italy
Nicola Gatta
Artisan vigneron crafting radical sparkling, redefining Italian Metodo Classico
Nicola Gatta grew up in Gussago, on the eastern edge of Franciacorta, surrounded by vineyards but never drawn to the region's dominant model. While Franciacorta built its reputation on consistency and polish, Nicola built his on independence. Working with small hillside parcels rich in limestone, he took time to understand his land before making decisions in the cellar — a deliberate inversion of how most producers work.
“I take my choices step by step: sometimes going forward, sometimes going backwards. My method is classic, but it wants to be a hymn to diversity.”

Good to know
Questions we get a lot
Is this a natural wine?
All our wines come from small growers who farm organically or biodynamically and keep intervention in the cellar to a minimum: native yeasts, little or no added sulphites. Every producer has their own approach; the details are in “From the vineyard to the bottle” above.
Why is it a bit cloudy, or is there sediment?
Many of our wines are bottled unfiltered. A light haze or some sediment is natural and harmless: stand the bottle upright for a few hours and pour gently.
How long does it keep once open?
It depends on the wine (see “Once open” above). As a rule: cork back in and keep it in the fridge, reds included.
When will my order arrive?
We ship Tuesday to Saturday, usually right away. In Germany delivery takes 2–3 working days; rates for every country are on our shipping page.
Can I pick up in Berlin?
