Bertrand and Hélène Gautherot own five hectares of vineyards in the village of Buxières-sur-Arce, located in the Côte des Bar region of the Aube, just 60 kilometers northeast of Chablis. Their estate has been certified by Ecocert and Demeter since 1998, and the soils of their plots—Vouette, Sorbée, and Biaunes—are composed of Kimmeridgian marl, covered by Portlandian limestone. These soils share more in common with the Premier and Grand Cru vineyards of Chablis than with the soils typically found in the Marne region.
Initially, Bertrand Gautherot sold all of his grapes to other Champagne producers. However, in 2001, encouraged by his friend Anselme Selosse, a renowned Champagne producer and thought leader in the region, Bertrand decided to start making Champagne under his own label. His first wine was released in 2004.
Vouette et Sorbée Champagnes are known for their dedication to expressing the true character of their terroir and vintage, achieved through meticulous work in both the vineyard and cellar. The grapes are harvested by hand, and the estate uses a vertical Coquard press to extract juice from the Chardonnay and Pinot Noir grapes. Fermentation occurs with natural yeasts, and sulfur use is kept to a minimum throughout the vinification process. Each bottle is labeled with the disgorgement date and the vintage of the base wine, even though most of Vouette et Sorbée's wines are not marketed as vintage Champagnes since they age on the lees for only 20 months, rather than the 36 months or more required for vintage designation.
