Nose: Fresh red and dark fruit, a floral note, light spice. Uncomplicated and inviting — this is a wine that opens immediately.
Palate: Light to medium body, juicy texture, supple tannin. Fresh fruit from start to finish. The Niellucciu grape brings its characteristic grip and spice but in a lighter, more immediate register here.
Finish: Clean, dry, with a slight mineral edge. Genuinely thirst-quenching.
Serve: 14–16°C. Works well with a slight chill in summer.

Les Soiffards is Nicolas Mariotti Bindi's most accessible red — made from Niellucciu on Patrimonio's clay and limestone soils with a lighter, earlier-drinking style in mind.

Vines: Niellucciu on clay and limestone soils in Patrimonio, northern Corsica. Certified organic.
Soils: Clay and limestone — the classic Patrimonio terroir that gives Niellucciu its spice and structure, here expressed in a lighter, more direct style.
Farming: Certified organic. Hand harvested in small baskets.Cellar: Cold pre-fermentation maceration for 2 days. Natural fermentation — no more than 30 days. Gentle daily pump-overs for finesse, no extraction. Transferred by gravity (no pump). Aged in tank. Bottled earlier than the domaine reds for freshness and immediacy.
Additions: Minimal sulphur (printed on label). No fining, no filtration.
