Nose: Lemon rind, lemon balm, white flowers, a subtle fennel note and a whiff of sea salt. Bright and immediately inviting.
Palate: Light body, vibrant acidity, a mineral generosity from the lees contact. Refreshing and moreish — the low alcohol keeps it light and the Vermentinu character gives it personality.
Finish: Clean, saline, with a light citrus persistence. Made to be refilled.
Serve: 8–10°C. The 1L format is the point.

Zinzinu is Nicolas and Julie Mariotti Bindi's personal everyday white — named after the sea urchins they eat it with off the Corsican coast.

Vines: Vermentinu on clay and limestone slopes at 250 metres altitude in Patrimonio, northern Corsica. Certified organic.
Soils: Clay and limestone. Harvested deliberately early at low maturity (12% natural alcohol) to preserve freshness and acidity.
Farming: Certified organic. Hand harvested.
Cellar: Direct press, thermoregulated stainless steel fermentation. Indigenous yeasts. Aged 6–8 months on lees in tank. Bottled in 1 litre.
Additions: Minimal sulphur (printed on label).
