Finish: Expressive and intriguingly distinctive—bold yet fluid, born of both vineyard and unconventional cellar imagination.
Serve: Lightly chilled. Twenty minutes in the fridge keeps the fruit bright and the tannin soft.

Cellar: Destemmed fermentation with indigenous yeasts and extended maceration on skins, followed by ageing in custom porcelain and stoneware vessels submerged in a pool of water.
Additions: Unfined, unfiltered, no added sulphites.
