How It Tastes

Lively and refined Crémant with citrus brightness, chalky minerality, and persistent mousse.

Nose: Citrus, hints of orchard fruit, white blossom, subtle saline nuance. 
Palate: Citrus brightness and orchard fruit weave through chalky mineral tones. Energetic, crisp acidity gives a clean structural frame that supports a delicate, persistent mousse.
Finish: Refreshing and refined, expressive of both varietal detail and limestone-tinged terroir. 
Serve:Chilled, 8–10°C.

A Brut Nature expression shaped by altitude, limestone, and at least 18 months on lees.
TERROIR & WINEMAKING

Chardonnay-dominated blend with Pinot Noir and Chenin Blanc from the Limoux appellation, grown on altitude-influenced clay-limestone soils in Roquetaillade.

Vines: Chardonnay, Pinot Noir, and Chenin Blanc from estate vineyards. 
Soils: Clay-limestone at altitude, contributing mineral character and freshness. 
Farming: Organic principles with minimal intervention. 
Cellar: Base wines fermented and aged in older demi-muids, followed by traditional secondary fermentation in bottle with added grape must. At least 18 months ageing on lees before disgorgement. 
Additions: Brut Nature—no added sugar at disgorgement.
