The food we serve follows the same principles as the wine.
Conceived in a collaboration between Slowness and the Danish chef and restaurateur Frederik Bille Brahe, Sofi embraces the craft tradition of baking on a quest to right some of the wrongs of industrialized food production.
At the core of our approach is the application of insights from the slow movement—the emphasis on craft, origin, materials, process—to the art of breadmaking. A lot of people don't understand that soil is as important for grain as it is for wine. That’s why all of Sofi’s bread begins with grains sourced from some of the best small organic farmers in Northern Europe.
What began in 2015 with just three wheels of cheese and a makeshift pallet table quickly grew into one of Berlin’s most exciting cheese counters — and perhaps even beyond.
At Alte Milch, carefully selected farmhouse cheeses sourced directly from producers have been at the heart of the shop from the very start. Matthias Becker and his team offer beloved classics such as Comté from Marcel Petite and Parmigiano Reggiano from Giorgio Cravero, alongside the rebels of the cheese world — from Mike Thomson’s Young Buck in Northern Ireland to cave-aged Pecorino from Tuscany. More curated than arranged, Alte Milch is a place dedicated to presenting cheese in its very best light.
Everything begins with the land — its care, respect, and the pursuit of exceptional quality extra virgin olive oil.
Agricola Di Pietro combines traditional Apulian olive-growing knowledge with the most innovative technologies, and was among the first in Italy to pioneer super-intensive olive cultivation, with over 1,000 trees per hectare planted in precise rows. Today, the estate grows 10 different cultivars. From cultivation and mechanized harvesting to milling just a few kilometers away to prevent oxidation, and storage under nitrogen, every step of the process is carefully controlled. This complete, zero-kilometer production cycle reflects a clear philosophy: crafting extra virgin olive oil of true excellence.
As early as 1901, grandfather Santo Marino — who had emigrated to the Basque Country — recognized that the deep-rooted expertise of Sicilian salt workers combined with the richness of the Atlantic catch could produce salted anchovies of exceptional size and quality. He settled in the small town of Orio, which soon became a destination for Sicilian artisans, pioneers in the art of salting.
His knowledge was passed on to his son Vicente, who continued to grow the business. More than a century later, the company is still run by children and grandchildren, proudly upholding the legacy that Vicente Marino anchovies remain a benchmark in the world of fine seafood preserves. Today, the brand stands not only for some of the largest and most flavorful anchovies available, but also for delicate sardines, mackerel, and tuna, line-caught and traditionally hand-processed along the Cantabrian coast.
