The Organic Monocultivar EVO Oil is produced exclusively from cold-pressed “Ogliarola” olives, a high-quality variety from the Apulian region that is smaller in size compared to other types of olives. The olives are carefully harvested in the early morning hours and immediately pressed on the same day to preserve the oil’s outstanding taste and chemical properties. This process gave birth to the flagship oil product, Olio, which has a fruity and intense flavour with harmonious characteristics that complement every dish.
