HOW THEY GOT HERE

Eric Thill grew up in Alsace in a winemaking family, steeped in vineyard life before relocating with his wife Bérengère to the Jura in 2007/2009 to pursue his own project in the Côtes du Jura.

They began with a modest 2.8 ha of vines near Trenal and Gevingey, planting Chardonnay, Savagnin, Pinot Noir, and Poulsard on a mix of marl, clay, and limestone soils.
From the start, their focus has been on organic farming and vineyard health, working without synthetic chemicals and always tending vines by hand. The estate became Ecocert organic certified in 2015, and since 2019 they’ve been certified Demeter for biodynamic viticulture, though they practice biodynamic methods thoughtfully and progressively rather than dogmatically.

Eric’s approach to winemaking emphasizes parcellaire expression — vinifying fruit from each plot separately to showcase the unique soil, exposure, and microclimate — using native yeasts, minimal sulfur, and careful élevage to preserve freshness and clarity.

Where The Wine Is Born

The wines of Domaine Thill come from the Côtes du Jura appellation, planted around Trenal and nearby Gevingey, in the Sud Revermont of the Jura — a cooler inland region where marl, clay, and limestone soils provide structure and salinity, and vineyard sites benefit from sun‑exposure and hillside airflow.

These soils — including grey, brown and red marl, clay, and Bajocien limestone — translate into wines with tension, minerality, and varietal clarity, whether in bright whites like Chardonnay and Savagnin or in lighter reds like Poulsard.

FOR THE NERDS

Domaine Eric & Bérengère Thill is a small, parcel‑focused estate founded in 2009 in the Côtes du Jura. Starting with just 2.8 ha of vines, the Thills now manage around 6–7 ha planted to traditional Jura grapes including Chardonnay, Savagnin, Pinot Noir, and Poulsard on a patchwork of marl, clay, and limestone soils.

Eric’s parcellaire approach means that each plot’s harvest is vinified separately — no purchased fruit, no blending across appellations — so that each cuvée expresses its particular terroir. Vineyard work has always been organic in spirit, even before formal certification by Ecocert in 2015, and since 2019 the estate has been certified Demeter biodynamic, reflecting deeper integration of natural rhythms into farming.

In the cellar, fermentations are spontaneous with indigenous yeasts, and sulfur is kept low. Whites are often pressed gently and aged sur lie, while reds see flexible maceration times — sometimes with carbonic elements for true fruit vibrancy. Aging from 6 to 18+ months gives each wine stability and harmony, and bottles are released only when Eric feels they are fully ready.

The result is a range that includes pure, mineral whites, elegant red expressions, and niche Jura styles like naturally sweet Savagnin — all reflecting the terroir and the vineyard’s voice.
