How It Tastes

A pale, finely structured red that privileges lift and texture over weight.

Nose: Tart red cherry, wild strawberry, dried rose, and white pepper, with subtle hints of orange peel and dried herbs.
Palate: Light in body yet structured, carried by vibrant acidity and the variety’s characteristic fine, assertive tannins. Red berry fruit remains taut and focused, edged by spice and a faint almond-like bitterness that adds definition.
Finish: Dry and persistent, with lingering peppery notes and a gently savory close.
Serve: Slightly chilled, 14–15°C.

Vines: 100% Grignolino from hillside parcels.
Soils: Predominantly sandy soils with marine sediments, enhancing aromatic lift and fine tannin.
Farming: Sustainable viticulture, manual harvest, careful bunch selection.
Cellar: Gentle extraction to preserve delicacy, spontaneous fermentation with indigenous yeasts, ageing in neutral vessels to retain varietal purity.
Additions: Minimal sulphur, no fining or filtration.
