Nose: Dried orchard fruit, citrus rind, dried apricot, subtle spice, hints of resin, ginger, herbal complexity.
Palate: Bright yet poised acidity gives energy and lift to a tactile mid-palate. Mineral threads and gentle tannic grip weave through layered depth and nuance from extended skin contact and maturation.
Finish: Persistent and resonant, with saline undertones and nuanced spice articulating both vintage intensity and terroir-driven winemaking.
Serve: Chilled, 12–14°C.

Ribolla Gialla from Oslavia in Friuli-Venezia Giulia, grown biodynamically on ponca soils—friable marls and limestones that lend mineral intensity and structure.

Farming: Biodynamic viticulture deeply respectful of site.
Cellar: Hand-harvested grapes undergo prolonged skin maceration in buried Georgian clay amphorae (qvevri) with indigenous yeasts and no temperature control, followed by extended ageing in large oak casks for several years.
