HOW THEY GOT HERE

Fond Cyprès was founded by Laetitia Ourliac and Rodolphe Gianesini in the early 2000s when they purchased a 15‑hectare estate in Escales, on the northern edge of the Corbières AOC in Languedoc.

Laetitia grew up in Corbières and Rodolphe is of French‑Italian descent; together they turned their passion for food, nature, and traditional wines into a serious winemaking project.

From the start they embraced organic viticulture (certified since 2006), hand‑harvested fruit, and native‑yeast fermentations to create wines with clarity, purity and a sense of place.

Their aim is to understand each parcel individually, respect old vines (some >60 years) and ancient varieties like Carignan, and highlight local, pure expressions of each site — all without shortcuts or unnecessary additives.

Where The Wine Is Born

Fond Cyprès’s vineyards lie in and around Escales, the northern Corbières subregion of Languedoc — a place where blue marl and calcareous soils meet cooler north‑facing slopes and vent Cers winds that mitigate the Mediterranean heat and preserve freshness in the grapes.

These soils and exposures lend minerality, balanced ripeness and aromatic intensity to Grenache, Carignan, Syrah and Cinsault, shaping wines that feel of their soil and of the southern landscape while retaining lift and definition.

Fond Cyprès is a natural wine domaine in the Corbières heartland — a rugged subregion of Languedoc known for its sun‑saturated hills, old vines, and diverse soils.

Laetitia Ourliac and Rodolphe Gianesini farm their ~15 ha organically (certified since 2006), with a focus on hand work, low yields, and soil health. Their vines — Carignan, Grenache, Syrah, Cinsault, and a few whites — grow on blue marls and calcareous slopes that are cooler and fresher than typical south‑facing Corbières sites, due to north exposure and wind influence.

In the cellar, Fond Cyprès champions indigenous yeast fermentations, minimal additives, and limited or no filtration. Individual parcels are vinified with attention to nuance and the energy of each vintage. The result is a portfolio ranging from light, refreshing reds like 1er Jus to deeper parcel expressions like Carignan de la Source or Cordières des Andes, plus unique whites and experimental wines like orange‑skinned Muscat.

Their wines reflect a Mediterranean sense of place — sun, garrigue herbs, mineral soils, cooling wind influence — all in a natural, expressive style.
